The Belgians are hot! in the UK. Only a few weeks after Thomas won the Curiosity competition at Dunnhumby, Koen matches this effort by teaching the Islandpeople an important lesson...
How to pour the perfect pint
Koen Michiels & Giles Pavey
After being three months in England I am disappointed to see that bartenders in this country do not treat the golden substance with the respect it deserves. Therefore I will shortly introduce the basics of proper beer pouring, which should be common knowledge if you ask me.
1 the tap installation has to be perfect. The pressure and the amount of CO2 need to be adjusted to the distance between the barrel and the temperature of the beer cellar.
2 the glass can not be greasy. A good tip is to add a drop of ammonia to the water into the sink, as this will assure that the glass is completely clean. Assure that the water tap is slightly open to assure that new fresh water is added constantly.
3 rinse the glass thoroughly with water before you pour beer in it. Check for grease stains and other impurities. A filthy glass means too many bubbles, too much CO2 and this makes your head ache.
4 pull open the tap in a fluent motion. Let some beer pour before putting a glass underneath the tap. DO NEVER TAP more then once, as this will leave a creamy layer underneath the head which makes you sick.
5 hold the glass at a 45 degree angle and pull it up so that you end up vertically in the end.
6 let the foam poor over the glass and wait for the right moment to slice of the excess head.
7 the head should be about 3 cm and should have a crown.
8 rinse all the foam rests from the glass and serve the pint with the logo to the customer
After these steps you can enjoy the perfect pint.
Gezondheid (Cheers)
Proficiat Koen! Stress! Wordt vervolgd...
